Chef Plum of Plum Luv Foods visited the Fox CT kitchen to talk about the upcoming Taste of Danbury event, which features cooking demonstrations, food education and more.
To promote the event, Plum prepared his lemon and red chili sage chicken drums. The recipe is below.
6 chicken legs
1 red chili minced
5 sage leaves sliced
1 tablespoon lemon zest
1 tablespoon olive oil
2 shakes of sherry vinegar
- In a bowl mix the chili, lemon zest and sliced sage with the olive oil. Season with salt and pepper, reserve a quarter of it.
- Toss chicken legs in the mixture and cook in a 400-degree oven on a sheet pan for about 20 minutes.
- Remove from oven and toss hot wings into the reserved marinade and add two little shakes of vinegar.
- Plate with a few lemon wedges and serve.
