MIDDLEFIELD--Lyman Orchards employees are working around the clock to finish up all the holiday pies that customers have ordered.

A sign hanging in the bakery says "pie fixes everything," and the bakers hold that saying close to their heart.

"It just takes a great team effort, everyone working in one direction," said Clif Radziunas, the bakery production manager. In all, between 20 and 30 employees are on pie patrol for the bakery's three busiest days of the year--the days leading up to Thanksgiving.

"We're baking as many hours as we can, it's almost non-stop," said John Lyman. During this month, the bakery sells about 150,000 pies--about 5,000 per day, seven days a week according to Radziunas.

So what do the bakers have to do to prepare? Take the pies out of the freezer, "rack 'em up, put 'em on the rack, bake 'em off, cool 'em down," and then pack them to go said Lyman.

But they do it happily, and love the apples they work with.
