MIDDLEFIELD - This record-breaking winter warmth is forcing ski report owners to find other ways to draw people in. It certainly doesn`t look busy at Powder Ridge Ski Area in Middlefield without snow.

"We`ve been able to finish up parking lots, outdoor facilities," said owner Sean Hayes. "We`ve been able to finish up those construction projects we`ve been slightly behind on."

They`re moving forward with other projects, too.

"We`ve designed the entire mountain facility to be a year-round destination facility," he said.

The main focus these last few weeks has been adding to the dining experience.

"There will be three levels: a cafeteria, a tavern for casual dining and the fine dining destination with our executive Chef Kevin Cottle," said Hayes.

Cottle has been featured on reality TV shows like Hells Kitchen. He`s helping Hayes get ready for their grand opening on January 16. So, when you make your next trip you`ll notice an old colonial style tavern and a fine dining spot called 'Fire at the Ridge.'

"The fine dining is going to be our show piece and that`s if you go to a high-class, luxurious hotel and you have their showpiece... that restaurant," said Cottle. "That`s what we`re trying to do here."

The business plan doesn`t stop with dining. Hayes wants to make other use of his property.

"We`re recreating a New England town on property, so there will be artisans, craftsmen, all here around the pond," said Hayes.

That`s next season, but coming up this summer on June 19, downhill mountain biking trails will be open.

"So we`ll have lift service for mountain biking," he said. "The first one in Connecticut,"
