Recipe: Smashed cheesy cauliflower

HARTFORD -Chef Taylor Grant Greenberg stopped by FOX 61's Good Day Connecticut  to share her recipe for  smashed cheesy cauliflower.

Smashed Cheesy Cauliflower (Serves 4)

  • 1 head of cauliflower
  • 1 cup of sharp cheddar cheese
  • 1-2 tbsp. chives or scallions
  • 3 strips of bacon, cooked and crumbled
  • Salt
  • Pepper
  • Garlic Powder
  • Olive Oil

Cut the cauliflower into large florets
Steam or boil the cauliflower until fork tender, being sure it doesn't get too mushy
Preheat oven to 400 degrees
Lightly grease a cookie sheet with olive oil and place the florets on the cookie sheet
Use the bottom of a glass to flatten and smash the florets
Sprinkle with cheddar cheese, garlic powder, salt and pepper
Drizzle with olive oil
Bake at 400 degrees for 10 minutes, until cheese is golden brown
Sprinkle with crumbled bacon and chives and enjoy!
