Summer Food From Foxwoods

Kevin Scott, executive chef at Shrine, High Rollers and The Scorpion Bar at Foxwoods Casino, stopped by Fox CT to share some summer specials.

High Rollers’ chicken pineapple burgers (makes four servings)

Burger ingredients:
2 lbs ground chicken
1 tsp salt
1 tsp pepper
1 egg
Ginger mayo (see below)
4 slices of Swiss cheese
4 slices of pineapple
Roll of choice

Prep:
Mix first four ingredients well. Form 8 ounce patties and sear. Once cooked to desired temperature, top with Swiss cheese until melted. While the burgers are cooking, throw pineapple slices on grill for 1 to 2 minutes per side. Divide mayo among four rolls, top with burger and slice of pineapple.

Ginger Mayo ingredients:
2 tsp ground ginger
1 tsp pickled ginger (if available – otherwise fine without)
1 cup mayo
Salt and pepper to taste

Prep:
In a mixing bowl add all ingredients and whisk together until evenly incorporated. Taste and check for seasoning.

Scorpion Bar’s spicy shrimp tostado (makes one serving)

Shrimp ingredients:
6 medium shrimp, peeled and deveined
2 tbsp. fresh cilantro, chopped
1/2 avocado diced
1/2 cup diced tomatoes
1 tbsp scallions
1 corn tortilla
2 tbsp spicy chili aioli
Salt and pepper to taste

Prep:
Pan fry tortilla on both sides till lightly browned. Cook shrimp for approximately 2 minutes at high heat. Flip shrimp and add cilantro, salt and pepper to taste. Toss with spicy aioli, and top tortilla with shrimp mixture, avocado, tomato and scallions.

Spicy chili aioli ingredients:
2 hydrated chilies
1 tsp lemon juice
1 cup mayo
Salt and pepper to taste

Prep:
Combine all ingredients in blender and mix well. Salt and pepper to taste.

Shrine’s avocado salad (makes one serving)

2 avocados diced
2 slices cucumber
2 tbsp. tobiko*
2 crab stick*
2 tbsp. yuzu*

*Widely available at most grocery stores and at all specialty Asian grocers)

Prep:
Combine diced avocados, tobiko, crab sticks and yuzu and mix well. Lay slices of cucumber on to desired plate and top with avocado and crab mixture. Drizzle with additional yuzu sauce if desired.
