Recipe: Buffalo Chicken Meatballs

Taylor Grant Greenberg joined FOX 61 Good Day Connecticut with her Buffalo Chicken Meatballs !

Ingredients

  • Meatballs:
  • 2 ribs of celery
  • 1 lb of lean ground chicken breast
  • 1/4 cup of panko bread crumbs
  • 2 egg whites
  • 3 scallions
  • 1 tsp. of garlic powder
  • 3/4 cup of buffalo sauce (I used Archie Moore's), divided
  • Cooking spray

Greek Yogurt Blue Cheese:

  • 1/4 cup of reduced fat crumbled blue cheese
  • 1/2 cup of nonfat Greek yogurt
  • 1/4 cup of reduced fat cream cheese
  • 1 tbsp. of lemon juice
  • 1/2 tsp. of garlic powder
  • 1/4 tsp. of salt

Directions

  • Mince the celery and chop the scallions, place in a large mixing bowl
  • Add the chicken, panko, eggs, and 1/4 cup buffalo sauce to the bowl and combine all ingredients
  • Roll the meatball mixture into teaspoon sized balls
  • Place balls on greased cookie sheet
  • Bake at 450 degrees for 15 minutes
  • While the meatballs cook, combine the ingredients for the dip
  • Let meatballs cool  and remove from cookie sheet
  • Toss the meatballs in 1/2 cup of buffalo sauce
  • Serve with Greek Yogurt Blue Cheese and celery
