Taylor Grant Greenberg joined FOX 61 Good Day Connecticut with her Buffalo Chicken Meatballs !
Ingredients
- Meatballs:
- 2 ribs of celery
- 1 lb of lean ground chicken breast
- 1/4 cup of panko bread crumbs
- 2 egg whites
- 3 scallions
- 1 tsp. of garlic powder
- 3/4 cup of buffalo sauce (I used Archie Moore's), divided
- Cooking spray
Greek Yogurt Blue Cheese:
- 1/4 cup of reduced fat crumbled blue cheese
- 1/2 cup of nonfat Greek yogurt
- 1/4 cup of reduced fat cream cheese
- 1 tbsp. of lemon juice
- 1/2 tsp. of garlic powder
- 1/4 tsp. of salt
Directions
- Mince the celery and chop the scallions, place in a large mixing bowl
- Add the chicken, panko, eggs, and 1/4 cup buffalo sauce to the bowl and combine all ingredients
- Roll the meatball mixture into teaspoon sized balls
- Place balls on greased cookie sheet
- Bake at 450 degrees for 15 minutes
- While the meatballs cook, combine the ingredients for the dip
- Let meatballs cool and remove from cookie sheet
- Toss the meatballs in 1/2 cup of buffalo sauce
- Serve with Greek Yogurt Blue Cheese and celery
