Ingredients:
- 3 chicken breasts, cooked and shredded
- 1 teaspoon cumin
- 2 packages shredded cheese, like Monterey Jack and cheddar
- 1 chipotle pepper
- 1 small onion
- 2 cloves of garlic
- Cheese
- Corn tortillas
- 1 can Enchilada sauce
- 1 bag Doritos
Directions:
Chop one chipotle pepper in adobo sauce and mix with the shredded chicken and one teaspoon cumin. Next sautee together one small chopped onion and 2 cloves of chopped garlic in a large pan over medium heat. Add chicken mix, cheese, crushed Doritos and combine. Spoon chicken mixture into corn tortillas into a single layer in baking dish. Pour half a can of enchilada sauce on top, add generous amount of shredded cheese and repeat with a second layer. Add Doritos on top, cover with foil, and cook at 400 degrees F for 15-20 minutes.
