Summer recipes with Arezzo Ristorante in Westport

WESTPORT, Conn. — The weather is warm, and the sun is shining! Summer is officially here, so here are some officially delicious summertime Italian recipes with Arezzo Ristorante in Westport! 

Summer Heirloom Tomato Salad

(Serves 2)

Ingredients

2 large heirloom/ripe tomatoes

Fresh basil

Olive oil, salt, and pepper

Quality burrata

*Add thinly sliced prosciutto for an added component.

Instructions

Thinly slice the tomatoes "tartare" style (remove the seeds if you want).

Sprinkle/drizzle with olive oil, salt, and pepper and let it sit for up to an hour. 

Arrange the tomato slices on a plate and cover the entire plate. Place burrata in the center and top with fresh basil leaves. 

Serve with crusty bread and more olive oil.

Roasted or Grilled Halibut with Italian salmoriglio sauce

(Serves 2)

Halibut

Two 6-ounce pieces of fresh halibut (or any flaky white fish) with the skin

Olive oil, salt, and pepper to coat and season. 

Instructions:

Coat the halibut generously. 

Grilling or pan sautee the fish (recommend using grill pan when over coals). Grill the skin side down 3-4 minutes before turning. 

Cook for 2-3 minutes and let it sit for a few minutes before topping it with the sauce. 

Salmoriglio sauce 

1 cup of extra-virgin olive oil

3 plump garlic cloves, thinly sliced

4 tablespoons of freshly squeezed lemon juice or more to taste

1/4 teaspoon of salt or more to taste

1/4 teaspoon of peperoncino 

2 tablespoons of chopped Italian parsley

Instructions

This can either be combined in a food processor to a chunky paste or mixed and left to macerate for about an hour before serving it over the fish.
