WETHERSFIELD, Conn. — Sally’s Apizza opened a new location in Wethersfield Thursday, the first of multiple to arrive in Hartford County.
The restaurant bar and chain, known for its New Haven-style pizza, opened at 5 p.m. sharp for dinner Thursday and rolled out the red carpet for the occasion. They held a ribbon cutting with the mayor and head of the Connecticut Restaurant Association and then it was off to the ovens.
“We are heavier on the sauce. Our sauce really shines through,” said Sally Apizza operations manager Francesca Messina.
A slice of Connecticut history is baked into every bite.
“We started off on Wooster Street in New Haven in 1938,” said Bret Lunsford, executive chef. “Sal Consiglio and his wife opened up a pizzeria from a bakery and just brought their passion for pizza with them and spread it across all of Wooster Street and New Haven.”
The new Sally’s Apizza spot is located along the heavily-traveled Silas Deane Highway at The Borden residential complex. The restaurant offers a blend of modern style and traditional taste.
“We pat every pie to order just the same way Sal did it,” said Messina. “Everything moves on over to our dresser station over here.”
The pizza is baked in a coal-fired oven at just over 700-degrees to get Sally’s signature crispy chew.
“Char is our signature cooking method here,” added Lunsford.
The Wethersfield location took three full years to open. While they've had a lot of challenges, Sally's plans to open more locations in Farmington, Newington and South Windsor.
